I would google Runic symbols and see if there is something in there that would work with what your looking for. You can do all sorts of different designs with that.

The Palm Leaf,Crusifix, most of the symbols of Apollo or SunGods due to the sun sacrificed and dying at sunset and being reborn at daybreak typifying the coming Messiah. St Sebastian's symbol of sacrifice is the arrow,or cross bow bolt, St Steven's the rock. The palm leaf is the most common , used in western Heraldry which makes for good tattoos.

Oh I almost forgot, the pelican with blood coming from a chest wound feeding little pelicans is a famous symbol of sacrifice used in Heraldry.
